Mango Salad
If you are a lover of Caribbean cuisine and mango chow, then this recipe is for you! We have reimagined the classic Trini dish and added our own little spin. If you are also looking to explore lots of flavour in this mango salad you can try it with Yawdi’s Pineapple Pepper Sauce!
This mango salad is the perfect mix of sweet and spicy and can be eaten in two ways, with Yawdi’s Pineapple Pepper Sauce or without! No matter which version you pick, this mouthwatering mango salad will be perfectly paired with any one of our Jamaican patties!
Recipe 1
Ingredients:
· 2 Mangos, cut into slices
· 1/2 of a Red Bell Pepper, sliced
· 1/2 cup Red Onion, chopped
· 1/2 cup chopped Cilantro
· Juice of one Lime
· 1 tsp of salt
Sauce:
· 3 Tbsp Yawdi’s Pineapple Pepper Jelly
· 1.5 Tbsp of water
How To:
1. Cut the mango, vegetables and cilantro and add them to a large bowl. Squeeze juice of one Lime over the bowl of chopped produce.
2. Turn on the stove to medium heat. In a small pot, add water and YAWDI's Pineapple Pepper Jelly. Stir until most of the Jelly dissolves in liquid form.
3. Add salt to the liquid Jelly and pour over the mango salad and mix until well combined. Store in the fridge for at least 30 minutes or until the mango salad is cold. (Trust us, it helps the flavour really sink in!)
Recipe 2
Ingredients:
· 2-3 Mangos, cut into chunks
· 1 Red Bell Pepper, diced
· 1/2 Small Red Onion, minced
· 1/2 cup chopped Cilantro
· 2 Tbsp Olive or Avocado Oil
· Juice of one Lime
· 1 tsp of salt
· 1/4 tsp cayenne
· 1/4 tsp all spice
How to:
1. Cut the mango, vegetables and cilantro and add them to a large bowl.
2. Add the rest of the ingredients to make the dressing and mix until well combined. - Store in the fridge for at least 20 minutes (Trust us, it helps the flavour really sink in!). - Enjoy your mango salad alongside your favourite patty flavour!
